Ginger - Orange - Nectarine Crisp

The truth is that sometimes I wonder what my life would have been like if I had just been a pastry chef instead of all this other stuff. Such a luxurious lifestyle! I graze cookbooks hungrily. I devour recipes, more than the actual dessert, because I want this other kind of life. But the truth is that the grass is always greener on the other side. I love to bake. And I love playing with recipes. Still, I imagine baking one crumble is way easier than baking 15 a day. So this one is for you - my escape from my stress last weekend. A unique take on a crumble. It was a hit.

Ginger - Orange - Nectarine Crumble

2 nectarines
1 Orange
Orange juice
1 cup sugar
1/4 cup ginger juice
1 1/2 cup flour
3/4 cup brown sugar
1/2 cup oats
1/2 teaspoon cinnamon
1/4 teaspoon salt
6 tablespoon unsalted butter, melted

Pre-heat oven to 375 degrees F. Cut nectarines. Arrange in slices on bottom of large baking dish.

Take the orange and grate all the zest off of it onto the nectarines. Squeeze the juice from the orange and then add enough orange juice (generic or if you have oranges, have at it with the legit stuff) until you've got about 2/3 cup of OJ. Add sugar and toss with nectarines in the baking dish.

Take all of the other ingredients and mix in a bowl.

Continue mixing until crumbly in texture and completely mixed. Spread out on top of nectarines. Bake 15 minutes. Take out, cover loosely with tin foil, put back in oven, bake for another 15-20 minutes until bubbling.
