Mini Apple Muffins with Brown Sugar Glaze

My friends were over, demanding cupcakes, and all I had was apples. One egg, barely enough powdered sugar to get me through a light dusting on pancakes. I had to think quick - this came to mind and it was a hit. They gobbled them up all night!

Mini Apple Muffins with Brown Sugar Glaze

For the muffins
12 mini apples
1 egg
3/4 cup sugar
1 cup nonfat yogurt
2 tablespoon water
1 2/3 tablespoon baking powder
1 tablespoon oil

For the glaze
1/2 cup unsalted butter
2 cup brown sugar
1/4 cup milk
2 cup powdered sugar
1 teaspoon vanilla


Combine the egg, sugar, flour, yogurt, baking powder, water and oil in a bowl until well-blended. Peel and cut apples into small pieces.

Stir in the apples, you can use as much or as little as you like - this is by no means a recipe that you have to follow completely.

Preheat the oven to 370 degrees F and spoon batter into muffin pans. Bake for 30 minutes. Yields 24 mini muffins.
For the glaze, add all the ingredients in a bowl and stir until completely combined. You might want to melt the butter a bit to make sure it's soft.

Pull the muffins out of the oven, drizzle with glaze. You'll have plenty for another recipe - cinnamon rolls! Coming up soon...
