Lavender Lemon Cake

I saw this cake and freaked out. It just seemed so amazing and light and delicious and perfect. And it is. It is also super easy and super beautiful and you should make it. In fact, stop reading. Go make this.

Lavender Lemon Cake


For the cake:
3 cups flour
1 1/2 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
16 tablespoons unsalted butter
1 1/2 cups sugar
1 tablespoon dried lavender
4 eggs
1/2 teaspoon lemon extract
1 cup plain yogurt
1 tablespoon grated lemon zest

For the glaze:
2 tablespoons honey
1/2 cup confectioner's sugar
1 tablespoon fresh lemon juice


Preheat the oven to 325 degrees F. Spray a pan with oil spray - I used a bundt pan but use whatever you've got.

In a bowl, mix the butter, sugar, flour, baking powder, baking soda, salt, lavender flowers, eggs, lemon extract, yogurt and lemon zest.

Easy right? This is what it should look like. Put it in the oven for an hour.

To make the glaze - combine the honey, confectioner's sugar and lemon juice over heat for a quick second until fully mixed. When the cake comes out of the oven, cool, and then drizzle with glaze. Serve and wait for the compliments!
