They are also great for parties. I made these (initially) for a dear friend for her baby shower. They were a hit - the little cupcake toppers didn't hurt. I think this recipe has been posted by about 8000 food bloggers. Figured one more couldn't hurt!
Vanilla Chai Cupcakes
Ingredients
For the cupcakes:
1/2 cup unsalted butter
1 cup sugar
2 teaspoons vanilla
2 eggs
2 teaspoons chai spice mix (recipe below)
1 1/4 cup flour
1/2 cup buttermilk
1/2 teaspoon baking soda
1/2 teaspoon apple cider vinegar
For the Chai Spice Mix:
1 1/2 teaspoon ground cardamom
1 1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
For the frosting:
1/2 cup unsalted butter
1/2 teaspoon vanilla
2 cups confectioner's sugar
remainder of chai spice mix
1/2 tablespoon cold milk
Directions
For the cupcakes, this will yield 12. Preheat the oven to 325 degrees F.
Make the chai spice mix. Combine the ingredients in a plastic bag. Take two teaspoons out and mix with unsalted butter, sugar, vanilla, eggs, flour, buttermilk, baking soda, and apple cider vinegar.

It'll basically look like thick chai. Put in the oven and bake about 20 minutes.
For the frosting, mix the unsalted butter, vanilla, confectioner's sugar, milk, and the rest of the chai mix. Seriously - is this the easiest recipe ever? Yes. Worth it? Absolutely! And look how cute!!
