Nutella Oatmeal Cookies

I know I know - where have I been? I haven't been baking, sadly. The good news is that I have about a billion recipes I have been saving in this "void" period and I want to make them all. The bad news is that they are completely disorganized - anyone have good ideas for storing them in an accessible way?

These cookies are amazing. EVERYONE loved them. I think I gained 10 pounds from them. It's straight out of the Nesting Project, which is a blog I love (I'm newly obsessed with my google reader and can't stop adding blogs to it). They are also super super easy to make.

Nutella Oatmeal Cookies


1 3/4 cup flour
2 sticks unsalted butter
2 eggs
3 cups quick cook oats
1/2 cup nutella
3/4 cup white sugar
1 1/4 cup brown sugar
1 teaspoon vanilla
1 teaspoon cinnamon
1 cup chopped walnuts


Seriously? I don't even know how to explain how easy this is. First, grab a couple baking sheets. Do something like put parchment paper or whatever you normally do to keep cookies from sticking to them.

Preheat the oven to 350 degrees F.

Put everything in a bowl. No joke. I seriously just tossed discretion to the wind and mixed with my hands. It was fun and messy and delicious.

Yeah, that picture of a whisk is misleading. I'm pretty sure I whisked for all of 10 seconds. Then shape into little flat disks. Bake for 16 minutes. Let cool for about 20 minutes.

Then use to bribe people for favors. No joke.
