Pumpkin Chocolate Chip Bread

Anyone else have a new years resolution to diet? Anyone else still have cans of pumpkin puree in the pantry that don't allow for a diet? That's cool, me too. I didn't even realize that this made 2 loaves - but no matter - I took it to work and it was gone pretty quick. It's super moist because of the pumpkin. Adapted from Two Peas and Their Pod, a super cute blog :) Enjoy, pretend it's the holidays!

Pumpkin Chocolate Chip Bread

Ingredients
3 1/2 cups flour
1 tablespoon cinnamon
1 tablespoon ground nutmeg
2 teaspoons baking soda
1 1/2 teaspoons salt
2 3/4 cup sugar
1 can pumpkin puree
1 cup oil
2/3 cup water
1 teaspoon vanilla
4 eggs
1 cup semisweet chocolate chips

Directions:

Preheat oven to 350 degrees F. Spray two loaf pans with some nosticklowcalwhatever spray. Mix everything together. Bake 60 minutes.

  2. I love how with baking, it is possible, to take all those ingredient and then turn it into something solid. Small things impress me. :)
