Lavender Almond Muffins

These are actually gluten free! Anyway, I couldn't resist a healthy recipe (hah!) that had lavender in it. I think I've mentioned before that I got my culinary lavender at the local farmers market. I also improvised a bit with some violet sugar I bought a while back. Hope you enjoy. I got the initial recipe from Scandi Foodie - an awesome blog if you haven't seen it, and if I had the patience would have made the yogurt icing cause it looks great! Anyway - still good, actually this is great for breakfast.

2 cups almond meal
1 teaspoon baking powder
1 teaspoon culinary lavender
3 eggs
1/2 cup unsalted butter
1 teaspoon vanilla
1 teaspoon honey (I used lavender honey - but any honey will do!)
Raw sugar (here I used my violet sugar)


Seriously - as per usual I have next to no instructions for you. Dump all the ingredients in a bowl and mix. I used a whisk - it was that easy.

Then take the batter and put into muffin liners or a muffin pan (or both, go wild!) and into an oven at 350 degrees F for about 18 minutes.
