Chocolate Cherry Almond Cake

I am such a baking slacker these days - so much wedding stuff going on (tis the season!) that I haven't had a chance to try some of the many many many recipes waiting in my arsenal. This one is from a blog called amandascookin - and is adapted a bit because I didn't have white chocolate...or a cast iron skillet. But it is really really good. Kind of shocking how good. You wouldn't think it. Anyway, highly recommended!

Chocolate Cherry Almond Cake

1/2 cup unsalted butter
1 cup sugar
2 eggs
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 jar maraschino cherries
1/2 teaspoon vanilla
1/4 teaspoon almond extract
4 oz semi-sweet chocolate morsels
1/2 cup sliced almonds

Preheat oven to 350 degrees F and spray a cake pan with some nonstickwhatever spray. Set aside.

Now, I melted the butter in the microwave, whisked the sugar, eggs, salt, flour and baking powder with it, and added the vanilla and almond extract. Then I drained the bottle of cherries into the bowl of batter and mixed that in as well. I took the cherries, tore them in half, and mixed them in gently.

I added the batter to the pan and then gently mixed the chocolate into that mixture - mostly so it just stayed on the top and literally just swirled it a tiny tiny bit. Then I sprinkled almonds all over the top and baked for 55 minutes.
