Yummy Cheesy Olive Bread

This bread is so easy. I'm all into playing with savory baking and this was on one of my 80000 blogs that I track and when I saw it on Gingerbread Cake (and a recipe from Dorie Greenspan no less!) I knew - that no matter what was in my fridge, this was going to be made.

Unfortunately I'm on so many freaking antibiotics that I honestly got exhausted from putting this in the oven - but don't let that deter you! On a normal day this could be done in your sleep! It's also a really versatile recipe - I didn't have a bunch of things, but I made do and added other things and the result was awesome.

Most Awesome Bread Ever

1 3/4 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1 pinch cayenne pepper (I added two, I like a little kick)
3 eggs
1/3 cup nonfat milk
1/3 cup olive oil
1 cup grated Fontina Cheese
1/4 cup cut up pieces of Fontina Cheese
1 bunch scallions, thinly sliced
Handful of green olives, sliced

Spray a loaf pan with some nonfatnocalwhatchamacallitbutterspray and preheat the oven to 350 degrees F. Dump everything into bowl and whisk together - maybe 1 or 2 minutes worth, until well blended.

Toss into oven - bake 40 minutes. Toothpick should come out clean.

  1. Yummy! My kind of recipe. Can I add jalapenos to this?

  2. I am not a big cheese fan, but if I was, I would love this I know.
