Chocolate Oatmeal Muffins

We had some leftover buttermilk in the fridge - seriously, I'm not even sure how it got there in the first place. Well, possibly for fried chicken...Anyway, had to use it and this recipe popped up on the good ol' reliable rss feed. Cute little blog called Blissfully Delicious - go check it out! I changed it a tiny bit, and used a bit more than the handful of chocolate chips already called for in the recipe because...well because there is no harm in a few extra chocolate chips :)

Chocolate Oatmeal Muffins

1 1/2 cup quick cooking oats
1 1/2 cup buttermilk
2 eggs
3/4 cup brown sugar
1/4 cup vegetable oil
1/4 cup unsalted butter
2 teaspoons vanilla
1 1/2 cup flour
3/4 teaspoon baking soda
1/2 teaspoon salt
chocolate chips

Preheat oven to 400 degrees F. This yielded 18 muffins for me, line some pans with muffin liners.

In hindsight, I realize I forgot to put baking powder in these as well - but it doesn't matter, they still turned out delicious. I didn't follow any of the precautions, really. I just dumped it in the bowl as per my M-O and whisked for a couple minutes. Resulted in the brown sugar being a little bit less integrated, but still yummy! Don't add the chocolate chips until the batter is in the liners - then sprinkle on top to your liking.
