Spiced Berry-Pistachio Crisp

I used to invent recipes - I used to dream them up. I miss that, now I'm always running from one thing to the next and I don't have time to sit and dream up yumminess. A co-worker asked me to make a cake recipe and in my chaotic day I neglected to buy all the right ingredients. And so I was forced to semi-make up a new recipe. I was so neglectful, I had to use my French measuring cup and convert to grams because my American one was at the back of a loaded dishwasher. This particular recipe is inspired by a few of the recipes in Williams Sonoma's Fruit Dessert Cookbook.

Spiced Berry-Pistachio Crisp


For the filling
125 grams sugar
2 tablespoons cornstarch
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1/2 bag frozen mixed berries
10-12 fresh strawberries

For the topping
315 grams flour
120 grams pistachio flour
60 grams sugar
1/2 teaspoon salt
2 teaspoons baking powder
3/4 cup unsalted butter, cut into small cubes
3/4 cup soy milk, unsweetened
cinnamon and sugar for sprinkling


Preheat oven to 350 degrees F and use a rectangular pan (or really whatever you can find) that's about 12 or so inches. Toss all the filling ingredients together and make a layer on the bottom of the pan with the mixture.

If you can resist eating that deliciousness - take all the topping ingredients and mix with your hands in a bowl until it's a mushy dough. Spread clumps onto the top of the berry mixture until mostly covered, then sprinkle with cinnamon and sugar and pop in oven for about 50 minutes. Could not be an easier recipe.
