Honey Rose Almond Madelines

That's right. Honey Rose Almond Madelines. I mean - when I saw it on eatyet it blew my mind. And when I put the plate in front of my guests, and then the J-Man, they were gone in seconds. SECONDS!

And here's the awesome thing - I know I say it all the time - but these are really really easy!

Honey Rose Almond Madelines

1/3 cup unsalted butter
1/2 cup sugar
2 eggs
1 tablespoon honey
1 teaspoon almond extract
3/4 cup almond flour
3/4 cup flour
1 teaspoon baking powder
pinch of salt

(No joke!) Mix all ingredients in bowl. I used my fingers -just crumbled it together like I would a tart crust. Preheat oven to 350 degrees F. Spray your madeline pans generously with some nocalwhatchamacallit butter spray. Spoon a little bit into your madeline pans. I mixed it up because I have one large one and one small one (a lovely gift from lovely friends!) and so the timing was tricky - 18 minutes was right for the small ones. I'd add another 5 minutes for the large ones. Let cool for another 5 minutes and then pop them out. DELICIOUS!
