Almond and Peach Clafoutis

When Trader Joe's has a flat of peaches for $4.99, you don't really question what you're going to do with all those peaches. You just know you have to have it. Especially if the summer has been the way Seattle's "summer" has been lately and peaches taste so much like summer - then you really have to have the peaches.

Almond and Peach Clafoutis

1 cup almond meal
3 eggs
1 1/4 cup nonfat milk
1 teaspoon vanilla
1/3 cup sugar
2 peaches


Bake at 350 for 40 minutes. Mix all ingredients except peaches, pour into pre-buttered/nocalsprayed round pan. Slice peaches and swirl inside the batter.

Serve chilled. Enjoy!
