Apricot Vanilla Muffins

The other day it was raining apricots. Seriously! A co-worker and owner of little britches bakery had a surplus of apricots and was kind enough to give me about 60 of them! They were so ripe that I had to bake them immediately!

Apricot Vanilla Muffins

2 cups flour
About 55 small apricots
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 eggs
3/4 cup brown sugar
2 tablespoons vanilla
1/3 cup oil


This recipe yields about 24 large muffins. Preheat oven to 400 degrees F. Mix all ingredients except apricots thoroughly. Then slice the apricot into fourths and blend into the batter. Spoon into a muffin tin and bake about 17 minutes.
