Blueberry Goat Cheese Muffins with Lavender Sugar

I'm back in the kitchen. I have been having visions of amazing recipes dance through my head and so my baking itch has returned.

I caught wind of this recipe on coconut&lime (awesome blog), tweaked it a tiny bit, and since they were gone in minutes, I'm going to guess it was pretty good! They aren't savory - the goat cheese makes them super moist, and the lavender sugar is perfect on top.

Blueberry Goat Cheese Muffins with Lavender Sugar

Ingredients
2 1/2 cups blueberries
2 cups flour
3/4 cups sugar
1/2 cup goat cheese (soft)
1/4 cup unsalted butter
1 teaspoon vanilla
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
lavender sugar



Directions

Preheat oven to 400 degrees F. This will yield 12 large muffins, line a tray and set aside. Mix everything in a bowl. I dumped the blueberries in early so that some could get smushed into the batter. It worked well!

Sprinkle with lavender sugar (or any coarse sugar) before sliding into oven. Bake 20 minutes or until toothpick comes out clean. I added about 3 extra minutes.



Stand back as the masses stampede to these muffins!
