Bourbon Peach Cake

Peaches are in season. I went to trader joes and bought that flat of them for $4.99 and no matter how many the J-Man and I consumed, we could not eat them fast enough. They were ripe and delicious and we needed to do something with them. I saw a recipe for peach bread on mamastephf and thought - interesting. But you know me - I prefer to sleep on things and dream about the possibilities. I came up with Bourbon Peach Cake. It's really, really good. Seriously.

Bourbon Peach Cake

1/2 cup unsalted butter
1/2 cup bourbon
1 cup sugar
2 eggs
1 teaspoon vanilla
1 2/3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
5 peaches, chopped up, preferably peeled
brown sugar for the top (optional)

Mix everything but the peaches and brown sugar together thoroughly. Preheat oven to 350 degrees F and pre-grease a loaf or cake pan. Cut up the peaches, if you can - peel them, but no biggie either way. Mix in the peaches and then pour all of the batter into the pan. Sprinkle some brown sugar on top for an extra kick. Bake 55 minutes. Cheers.
