Rhubarb Loaves

This recipe caught my eye on FoodDoodle (cute blog!) and I decided I'd give it a whirl. Obviously I had to tweak things as I never have what everyone else seems to have on hand in the fridge. I will say that I made about 5 mini loaves and probably could have made 4 with the same batter, just to fill the pans out more. I'll also say that you might be seeing a lot of rhubarb if it continues to be $2 at the farmer's market!

Rhubarb Loaves

Ingredients
1 1/2 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
2 eggs
1/4 cup oil
1/4 cup unsalted butter
1 teaspoon vanilla
1 teaspoon orange blossom water
3/4 cup sugar
1/4 cup ricotta cheese



Directions

Preheat oven to 350 degrees F, spray some mini loaf pans with nocalwatchamacallitspray and set aside. Mix all of the ingredients, except rhubarb, until combined thoroughly. Cut the rhubarb into small pieces and stir into batter. Split batter evenly among the pans and bake 30-35 minutes, when a toothpick comes out clean.
