Flourless Chocolate Engagement Cake

When my friend Rebekah got engaged, I couldn't wait to be a part of the festivities. "Engagement party!" I announced. She smiled, patiently, and let me invite people to my house, dream up menus and decorations, and generally create a lot of chaos around her love. In the last few days I asked over and over if there was anything specific she wanted. "Flourless Chocolate Cake," she finally said. This recipe is from Epicurious, Gourmet Magazine, but it floored her fiance such that I am now making their wedding cake!

Flourless Chocolate Engagement Cake

4 ounces bittersweet chocolate
1 stick unsalted butter
3/4 cup sugar
3 eggs
1/2 cup unsweetened cocoa powder

Preheat oven to 375 degrees F. Butter a round cake pan. Put chocolate and butter in a bowl over a pan of boiling water and melt slowly. Mix with sugar, eggs and cocoa powder. Bake 25 minutes. Easy.
