Mimosa Cake

I came up with this combo by accident, I saw a great recipe on Scandi Foodie for flourless orange cake and had some leftover champagne frosting in the freezer. I was trying to be cute - "Mimosa cake!"

Ingredients for cake
2 oranges
3 eggs
215 grams sugar
300 grams almond flour
1 teaspoon baking powder

Ingredients for frosting
2/3 cup champagne
1/2 cup unsalted butter
3 1/2 cups confectioner's sugar
1/4 cup cream cheese
5/8 cup cornstarch

Directions for the cake
Boil two oranges for 15 minutes. Drain, boil again for 15 minutes. Put in food processor and pulse until pureed. Add eggs, sugar, almond flour and baking powder. Mix thoroughly.

For the champagne
Mix all of it together!
