Flourless Chocolate Cake Part II

I appear to be making quite a few flourless chocolate cakes these days - this one was a real stunner, the almond meal made it absolutely mouthwatering. The recipe I adapted from was on The Little Teochew - a great blog that I strongly suggest you check out!

Flourless Chocolate Cake

200 g semi-sweet chocolate
1 tablespoon rum
150 g sugar
100 g almond meal
10 tablespoons unsalted butter
5 eggs
pinch of salt

Preheat oven to 355 degrees F. Butter a pan up the way you normally do and set aside. Melt the chocolate, sugar, rum and butter in a heat-proof bowl over a pan of boiling water. Mix with the rest of the ingredients and pour into pan. Bake about 50 minutes. Voila.
