Rustic Apple Cake

Okay this  is not my recipe. Actually - we had apples and I was too lazy to make pie dough so I made apple cake and I got the recipe from SimplytheSweetLife and man, am I grateful! Biggest hit ever! I'm talking about a bigger hit than chocolate cake and s'mores combined. Funny how the simplest things are often the tastiest. 

Rustic Apple Cake

2/3 cup sugar
2 eggs
1 3/4 cup flour
1/2 cup milk
2 teaspoons baking powder
1 teaspoon baking soda
zest of 1 lemon
lavender sugar
1 teaspoon almond extract
3 medium apples
4 tablespoons unsalted butter

Preheat oven to 350 degrees F and butter a pan with whatever makes you happy. I messed up and...didn't read the instructions. So. Mix the plain sugar, eggs, flour, milk, baking powder, baking soda, lemon zest, 2 tablespoons of unsalted butter and almond extract into a batter and pour in pan. Chop one apple up into tiny pieces and sprinkle on top of batter. Slice the other two apples and spread on top. Take the last 2 tablespoons of unsalted butter and cut into small pieces. Spread on top of the apples. Finally, take raw sugar, or lavender sugar, or whatever you've got, and sprinkle on top of that. Bake about 50 minutes.
