I love love love cornbread. I can't imagine anything more satisfying and delicious, and it's such a great standby for all kinds of soups and other fall goodness. I played with a recipe I recently found on the Curvy Carrot, a great blog if you haven't checked it out yet!
Spicy Jack Cornbread
Ingredients
1/2 teaspoon red pepper flakes
1 1/4 cup cornmeal
3/4 cup flour
1 tablespoon sugar
2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
4 ounces grated jack cheese
2/3 cup soy milk
2/3 cup soy milk + 1 tablespoon white vinegar
2 eggs
3 tablespoons unsalted butter
Directions
Preheat oven to 425 degrees F. Do the grease-the-pan thing and set aside. Mix all of the ingredients together, might be best to save the cheese for last. Pour into pan, bake about 20 minutes. Enjoy.
