Citrus Cake



I have seen a gazillion citrus/orange/lemon cakes on the web - this is a melange of a few of them. I hope you enjoy it as much as the family did for Christmas!

Citrus Cake


Ingredients for the Cake
3/4 cup sour cream
3/4 cup buttermilk
3/4 cup sugar
1/2 cup unsalted butter
2 1/2 cups flour
zest of 1 lemon
2 teaspoons baking soda

Ingredients for the Syrup
2 tablespoons water
1 2/3 cup powdered sugar
juice of 2 lemons

Ingredients for the Citrus Topping
6 clementines
2 cups sugar
1/2 cup water

Directions for the Cake
Pre-grease a pan and pre-heat oven to 300 degrees F. Throw everything into a bowl and mix thoroughly. Bake for an hour.

Directions for the Syrup
Bring everything to a boil and let thicken for about 2 minutes. Reserve for Cake. If you choose to make a bundt cake, you can pour some syrup on top and some in the middle. Otherwise, pour all of the syrup on top. It will soak through.

Directions for the Citrus Topping
Bring 6 clementines to a boil for 10 minutes. Make sure there are no seeds. Remove from water and slice. Boil 2 cups sugar and 1/2 cup water for 20 minutes. Put the slices of clementines into the reduced mixture and coat generously. Decorate the cake with the slices.
