Olive and Herb Focaccia

I caught this recipe on the technicolor kitchen - an awesome blog if you haven't seen it yet! It looked easy enough, and it was certainly tasty. Give it a whirl!

Olive and Herb Focaccia

3 cups flour
1 tablespoon oregano + 2 tablespoon oregano
7 grams yeast
2 teaspoons salt
1 teaspoon sugar
1 tablespoon olive oil + 1 tablespoon olive oil
1 1/4 cup warm water
12-15 olives, pitted, sliced
1 teaspoon coarse salt

Combine flour, first tablespoon of oregano, yeast, salt and sugar in a bowl. Stir, drizzle with water and first tablespoon of olive oil until shaggy in texture. Shape dough into ball, place into oiled bowl and cover with plastic wrap for about 45 minutes.

Lightly oil cooking sheet and turn dough onto it. Shape into oval, brush with oil, and cover with plastic wrap for 20 minutes.

Preheat oven to 430 degrees F. Lightly press your fingertips into the dough, creating fingertips marks - or dimpling. Drizzle second tablespoon olive oil, second tablespoon oregano, and olives and salt. Bake about 20 minutes.
