Spicy Quinoa Patties


Ok - I know this is a huge difference from my normal blogs on baking but I just had to share this spectacular recipe I caught on Soup Addict - For the gluten-free folks, this is for you - and for everyone else, this is seriously a hit. I kinda switched things around a bit based on what was in the fridge but no one seemed to mind. Everyone had their hands in this dish, delish!

Spicy Quinoa Patties


Ingredients
2 cups cooked quinoa
3 large eggs
1/2 teaspoon sea salt
1 onion finely chopped
2 cloves garlic, crushed
1/3 cup shredded jack cheese
1/2 teaspoon crushed red pepper
a couple grinds of black pepper
3/4 cup bread crumbs
1 tablespoon olive oil

Directions
Ok. Mix everything in a bowl. I used my hands (washed, of course), and kinda just dug in until everything was mushed together. You want it to be the consistency of a hamburger patty, but thinner and a bit smaller if possible. You want it to stick together so if you need another egg or you need to add water to get some more sticky, make it happen. No harm done. Heat the oil in a pan - much like you would for hamburgers, and stick a few patties in to get a feel for it. You want them crispy on the outside, cheesy melted on the inside. You'll find it's real easy and they are a huge hit!
