Ok so the J-Man has been doing this gluten-free thing for awhile and I figure, it's time to start testing some recipes he can consume because I really don't have anyone else to feed! Found this gem on Nuts About Food. Hers is much more beautiful and I'm guessing that she spent a lot more time mixing properly...go figure...baking requires more than my haphazard method!
Gluten-Free Rice Flour Cake
Ingredients
4 eggs
200 grams sugar
225 grams rice flour
225 grams potato flour
9 tablespoons unsalted butter, melted
1 tablespoon baking powder
1 teaspoon vanilla
Directions
Pre-heat oven to 350 degrees F. Grease a cake pan (preferably a bundt pan!). Mix all the ingredients and toss into oven for 45 minutes.
Dust with confectioner's sugar and enjoy!
