Raspberry Doughnuts with Champagne Frosting


These were invented after my very special J-Man got me a doughnut pan for Valentine's Day! Talk about true love...anyway, I wanted to play with some of the more fun ingredients I have in the fridge so you get to see the results.

Raspberry Doughnuts with Champagne Frosting

Ingredients For the Doughnuts
2 cups flour
3/4 cup sugar
1/3 cup mashed frozen raspberries
2 teaspoons baking powder
1/4 teaspoon fresh ground nutmeg
1 teaspoon salt
3/4 cup buttermilk
2 eggs
2 tablespoons unsalted butter (melted)

Ingredients For the Frosting
2/3 cup champagne
1/2 cup unsalted butter
3 1/2 cups confectioner's sugar
1/4 cup cream cheese
5/8 cup cornstarch

Directions For the Doughnuts (makes 10-11)
Preheat oven to 425 degrees F. Pre-spray a doughnut pan with nosticknocalbutterspraystuff Mix all ingredients together thoroughly, fill the doughnut pan about 2/3 full, bake 9 minutes. Let cool. 

Directions for the Frosting
Mix it up.

Decorate and enjoy!
