Gluten-Free Margarita Doughnuts!

Margarita Doughnuts


The added bonus to this deliciousness is that these are gluten-free - as requested per the J-Man. I am getting good at guessing some of the components of a recipe and altering it accordingly for his dietary needs! And then of course...the Margarita Glaze came straight out of Top Pot Hand-Forged Doughnuts

Ingredients for the Doughnuts

1 cup rice flour
1/2 cup garbanzo flour
2 teaspoons baking powder
1/2 teaspoon sea salt
2 eggs
1 cup sugar
1/4 cup canola oil
1 teaspoon vanilla
3/4 cup almond milk
1 teaspoon cornstarch

Ingredients for the glaze

1 teaspoon fresh lime zest
1/2 cup confectioner's sugar
2 teaspoons lime juice
1 tablespoon tequila
Fleur de sel

Directions for the Doughnuts

Preheat oven to 350 degrees F and spray a doughnut pan (or two, if you have another!) with some no-stick low-cal who-knows-what's-in-this butter spray. Set aside. Mix all ingredients together and fill doughnut pan 2/3 full. Bake 20 minutes.

Directions for the glaze

Mix everything but the fleur de sel together in a bowl. Glaze doughnuts as they come out of the oven. Sprinkle with fleur de sel if you want it.
