Pear Almond Cake

I'm not kidding you - do not be fooled by the looks of this cake, this was one of the best cakes I've ever made - It is THAT good. Adapted from In Erika's Kitchen - amazing!

Pear Almond Cake


2 eggs
1 cup almond milk + 1 tablespoon white wine vinegar
1/3 cup canola oil
3 tablespoons Frangelico
1 cup sugar
1 teaspoon almond extract
2 medium pears, peeled and grated
1 3/4 cup flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup almond meal
3 tablespoons coarse raw violet sugar 


Pre-heat oven to 350 degrees F and grease a cake pan however you like. Grate the pears and add all the ingredients except for the raw sugar in a bowl, mix thoroughly. Pour mixture into pan and then sprinkle raw sugar on top. Bake 45 minutes.


  1. I love your adaptation - I would never have thought to mix the almond milk with vinegar. And I bet the Frangelico adds a lot, too!
