Gluten-Free Banana Bourbon Cake

One day I'll tell you all about my race for office - how it changed who I am. But tonight, I just miss posting recipes. I made this one over the summer, as always, playing with a recipe - this time from Gluten Free Goddess.

Gluten-Free Banana Bourbon Cake


1 1/2 cups almond flour
1/2 cup rice flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon ground nutmeg
1/8 teaspoon cinnamon
1/8 teaspoon ginger powder
1/8 teaspoon clove, 
Pinches of fresh grated nutmeg
1/4 teaspoon sea salt
2 eggs
1/3 cup olive oil
1 1/2 cups light brown sugar
3 medium very ripe bananas, cut up, mashed
2 teaspoons vanilla extract 
3 tablespoons pumpkin infused bourbon (regular bourbon is fine too!)


Pre-heat oven to 350 degrees F and nocalbutterspray a loaf pan. Mix all ingredients in bowl thoroughly Bake for 55 minutes. Devour.
