Chai Pumpkin Pie

This is a simple recipe - a hit with everyone who likes chai - and a delicious addition for the holidays! Recipe from Heed the Feed!

Chai Pumpkin Pie


For the Crust
1 1/4 cups unbleached, all-purpose flour
1 tsp natural cane sugar
1/2 tsp salt
1 stick unsalted butter, very cold, cut into small pieces

For the Filling
1/2 cup sugar
1/2 cup brown sugar
1/4 tsp salt
1 tbsp ground cinnamon
2 eggs
2 cups pumpkin puree (canned is fine)
1/2 cup nonfat milk
1/4 cup chai latté concentrate


For the Crust
Mix everything in a bowl until thoroughly blended - I used my hands. Shape into a disk and place in fridge for at least 1/2 hour.

For the Filling
Preheat oven to 350 degrees F and spray your pan with some nostickbuttery goodness. Line the pie dough in the pan. Mix all the ingredients for filling together in a bowl until well-blended, pour into pie crust and bake  for about 80 minutes or until toothpick comes out clean!
