A few things about this recipe - (1) I had no idea that Quince was so "Middle Eastern" as an ingredient! I assumed everyone used it (2) I have a friend who deals Quince, I get a huge pile every year from her, she's awesome (3) This stuff is freaking amazing.
Quince Jam - recipe as found on Simply Recipes, slightly adjusted by adding lime and increasing the number of quince/decreasing ratio of sugar.
Ingredients
12 Quince
8.5 cups water
1/2 cup lime juice
2 Tablespoons lime zest
4 cups sugar
Directions
Add everything put the quince into a large stock pot. Start grating the quince, peel and all, until you get to the core and immediately transfer to the stockpot. Quince turns a ruddy orange when cut open, so the longer you wait, the darker the jam. Bring all ingredients to a boil for about 50 minutes. Pour into sterilized jars. Rock on.
