Gluten Free - Goat Cheese and Pepper Muffins
Adapted from the ever-glorious Smitten Kitchen, whom I hear as a new cookbook and I can't wait to see it!

Ingredients
1 cup coarse cornmeal
2 cups nonfat yogurt
1 cup garbanzo bean flour
2/3 cup rice flour
1/3 cup potato flour
1 1/2 tablespoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
6 ounce log of goat cheese (I used drunken goat mitica)
2 tablespoons honey
1/4 cup sugar
3 eggs
2 tablespoons unsalted butter
2 1/2 cups frozen corn kernels
1 green poblano pepper

Instructions
Mix all the ingredients thoroughly, preheat oven to 350 degrees F. Bake for 30 minutes in muffin tins that are properly buttered or lined. Enjoy. Preferably with this butter compound I featured a few weeks ago!
