Pear Caramel Ice Cream

Another recipe adapted from The Perfect Scoop - love this book! Pear Caramel Ice Cream!

3 medium pears
3/4 cup sugar plus 2 tablespoons
2 cups heavy cream
1/8 teaspoon coarse salt

Cut the pears up into slices. Cook the sugar over medium heat until starts to darken - stir constantly. Mix pears until cooked - 10 minutes.

Remove from heat, stir in 1/2 cup cream. Stir in the rest of the cream. Let cool to room temperature and then puree in blender. At this point I deviated and chose to chill this mixture as it was in the refrigerator. Then I followed the instructions for my ice cream maker and processed for 20-25 minutes. I hope you enjoy!
