Milk Bar Corn Cookies - Had to be done..



If I had the Milk Bar cookbook I would be well on my way to adult on-set diabetes. Instead, I pillage from the ample food bloggers who are as obsessed as I am, and I am grateful for their posts!

This recipe is directly from Bake Your Day. And clearly, Momofuku for the win.

Ingredients
1 cup unsalted butter
1 1/2 cup sugar
1 egg
1 1/3 cup flour
1/4 cup corn flour (this is a real thing, not to be confused with cornmeal)
2/3 cup freeze-dried corn powder (I just tossed freeze dried corn in food processor)
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1 1/2 teaspoon kosher salt

Directions
Preheat oven 375 degrees F. Be forewarned - if followed precisely, this recipe is worth it. I am terrible at cookies. I don't know why, I choke every time. I'm constantly thinking - maybe 1 more minute and they'll be even more perfect. And then boom, burned. Then the next time I'm so paranoid about burning that it's half raw inside.

But these, these were different. I used an ice cream scoop and scooped them out on a baking sheet. I baked 15 minutes, middle rack. Perfect.
